So my hubby isnt a fan of peach cobbler but said he loved pineapple cobbler, until this moment i had never even heard of it but i said "hey what the hell might as well try it."
Well yesterday I was gifted a large bottle of Amaretto. I tasted it and it's kinda like and overly sweet almondy spiced rum. Sooooo, I had this brilliant plan to make drunken pineapple cobbler.
Drunken Pineapple Cobbler:
1 1/2 cup self-rising flour or all purpose with a 1/2 tsp baking powder and a 1/2 tsp salt
8 tablespoon (1 stick) butter
1/2 cup amaretto or spiced rum
2 cup sugar, divided
4 cup cubed pineapple
1 1/2 cup milk
ground cinnamon, optional
vanilla
Preheat oven to 350 degrees.
Combine the pineapple, 1 cup sugar, and alcohol in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.
Put the butter in a 3-quart baking dish and place in oven to melt.
Mix remaining 1 cup sugar, flour, vanilla and milk slowly to prevent clumping.
Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.
To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.
